Homemade Tzatziki

Homemade Tzatziki

An easy, homemade tzatziki. Hands down one of the greatest dips and sauces of all time. It's rich in flavour and full of freshness. I've always got a batch of it on the go in my fridge.

Ingredients:

  • 400g soya yoghurt, unsweetened
  • 2 garlic cloves, minced
  • 1/2 cucumber
  • 1/2 lemon, squeezed
  • handful fresh mint, chopped
  • 1 tbsp chopped dill
  • 1 tbsp extra virgin olive oil
  • salt, to taste

Directions: 

  1. Grate the cucumber and squeeze as much of the juice out of it with your hands.

  2. Add the squeezed cucumber to a bowl with the yoghurt, minced garlic, chopped mint and dill, lemon juice, olive oil and salt. Mix together till combined.

  3. Leave to set in the fridge for up to a day for the best taste.
